Tea processing has a good potential future. Microwave can be used in blanching, drying and extracting. As one of the modern tea processing technology, microwave technology is developing to massive processing scale. Because tea leaves has moisture, water molecular moves at high speed and produce friction heat. Thus tea leaves are heated uniformly from deep inside. Microwave is very suitable to be used in blanching and drying steps.

Microwave is widely used in drying and roasting of sesame seeds, sunflower seeds, peanuts, walnuts, almonds and chestnuts., etc. Compared to traditional method, microwave roasting makes products crispy, no broken, natural color, good look and sterilized.
Microwave roasting is good at fast thermal transduction and heating speed. Microwave machine does not generate heat. It is microwave that infiltrate products to produce interior heat due to molecular friction. Thus, moisture in the products is evaporated in short time and inflated due to pressure. The inflation makes molecular structure change in the products and makes products a reticulum and microporous structure.
